You can use this recipe to learn how to make a clover club at home or how to make a clover club at the bar, depending if you're into home mixology or are a bartender. This recipe should definitely fit into your bartending 101 black book if you have one (you should have one!).
Egg white cocktails are just awesome and the clover club cocktail is really no different. You can make a clover club at home with egg white just like they do at the bar and get a beautiful foamy head on top of the drink, which will slowly turn the drink pink as the foam moves to the top; thanks egg whites!
One thing we've found that makes a predictable clover club recipe is the use of a well established raspberry syrup like Royal Rose. This gives your cocktails a predictable consistency and your clover club will taste the same each time, unlike seasonal fruit which can be too bitter or just bland.

.5 oz. Fresh Lemon Juice
.5 oz. Raspberry Syrup
