Bihari Chicken Qorma:
Ingredients
Chicken 750 gm
Crushed fried onion ½ cup
Ginger garlic paste 1 tbsp
Salt 1- ½ tsp
Red chili powder 1- ½ tsp
Turmeric ¼ tsp
Crushed coriander 1 tbsp
Clarified butter ¾ cup
Yogurt 1 Cup
All spice Mix 1 tbsp
Crushed poppy seed 1 tbsp
Crushed coconut 1 tbsp
Green cardamom 6-8
Screwpine water few drops
Finely chopped ginger 2 tbsp
Boiled eggs 2-3
All spice powder ½ tsp
Method:
Heat clarified butter in a pan and fry chicken, when the chicken’s color changes place it separately. Now in same clarified butter fry ginger garlic paste, salt, red chili, turmeric, coriander and whole all spice. Add yogurt and cook. Now add fried chicken and cook further. Add poppy seed, crushed coconut, crushed whole spices, fried crushed onions, green cardamom and screw pine water, add ½ cup water and let simmer. When the dish gets ready, garnishes with boiled eggs and finely chopped ginger.




Daal Mash fry:
Ingredients:
Split Bengal gram (boiled) ½ cup
White lentil (boiled) 1-1/2 cup
Tomatoes (boiled & cut) 3-4
Red chili powder 1-1/2 tsp
Turmeric ½ tsp
Salt to taste
Ginger garlic paste 1 tbsp
Mix whole all spice 1 tbsp
All spice powder ½ tsp
Butter 4 tbsp
Clarified butter ½ cup
Asafoetida 2 pinch
Ginger (finely cut) as required
Green chilies as required
Green coriander as required
Mint as required
Fry onion as required
Method
Heat butter and oil add whole all spice, ginger garlic paste, boiled tomatoes, salt, red chili powder and turmeric and saute gravy. Now add white lentil, split Bengal gram and 1 cup of water and let it cook. When lentil and gravy get mix well then add asafoetida, all spice powder, little ginger and green chilies and let it simmer. Now take out in dish and garnish with green coriander, green chilies, ginger and fry onion.




Fry Bhindi Aalu Masala:
Ingredients:
Lady finger (cut in length) ½ kg
Boiled potatoes (cubed) 2 cup
Gram flour ¾ cup
Crushed fennel seeds 1-1/2 tsp
Nigella seeds 1-1/2 tsp
Crushed red chili 1 tbsp
Turmeric ½ tsp
Salt to taste
Chopped ginger garlic 1-1/2 tbsp
Chaat masala to taste
Oil for frying
Onion rings for garnish
Method
Cut ladyfingers in length add ½ cup of gram flour, nigella seeds, fennel seeds, chopped ginger garlic, crushed red chili, turmeric and mix well. Then deep fry ladyfingers, add same masala to potatoes and deep fry. Sprinkle chaat masala and garnish with onion rings.
