Muthiya or muthia is made using Flours, vegetables, of various kinds combined with yogurt and seasoned with spices like ginger, chili, coriander cumin and more.

In today's recipe, I am using cabbage (Kobi or gobi patta) and spring onion (Hari Dungri) but other vegetables like spinach, bottle gourd, squash, zucchini, fenugreek leaves and more can be used. Flours like oat, quinoa, corn, sorghum, barley can be used. I usually prefer to use Sooji (rava or semolina) with besan (chickpea flour) to get the soft texture of muthiya.
