Amritsari Aalu:

Ingredients:

Potatoes (boiled) 5
Tomatoes (pureed) 3
Fennel seeds 1 tsp
Onion seeds ½ tsp
Fenugreek seeds ¼ tsp
Red chili powder 1 tsp
Turmeric ¼ tsp
Coriander leaves 1/3 cup
Curry leaves 10 to 12
Cooking oil (palm oil based) ½ cup
Salt 1 tsp

Method:

Puree tomatoes, boil potatoes, cut 3 potatoes into big pieces and coarsely mash the rest. Heat Cooking oil (palm oil based) in a pan, put fenugreek seeds, onion seeds, fennel seeds, chili powder, turmeric and curry leaves, fry for a while, add pureed tomatoes, fry for 2 to 3 mins, add potatoes, mix well, add 2 cups of water, bring to boil, add salt and coriander leaves, cook for 10 to 15 mins, serve hot with purees.



Shinwari Karahi :

Ingredients:
Chicken (10 pieces) 1/2 kg
Banaspati (palm oil based) 1 cup
Whole tomatoes 4
Karahi masala 2 tbsp
Coriander leaves (chopped) 2 -3 tbsp
Green chilies 6
Ginger (sliced) 1 tbsp
Ginger garlic paste ½ tsp
Salt ½ tsp

Method:
Heat Banaspati (palm oil based) add chicken fry for 10 min on high flame and remove chicken. Add whole tomatoes cover and leave it for 10 mins, open and remove the wrinkled peel of the tomatoes, add in half fried chicken ginger garlic paste half tsp salt, karahi masala, cover and leave it for while on low flame then add coriander leaves and green chilies. Serve with Naan.
